Batmobile fighting is the most disliked part of the game by most players. I personally find it really enjoyable, it just takes one specific trick: USE THE VULCAN GUN and shoot the blue or orange (for the Diamondbacks only) lights. Continue to use the 60mm Cannon at the same time, but while it's recharging, the Vulcan Gun really helps, especially after you upgrade it.
